WHAT:
An ode to Mezcal, the ancient Mexican drink known as “The elixir of Gods”.
NAME:
“Day of AAriachi” is a tribute to Mexico’s two most exquisite traditions: ´Day of the dead´ and ´Mariachi´ - both traditions are inscribed into UNESCO as “cultural heritage of humanity” due to its joyful and peaceful celebration of the deceased loved ones represented by the Catrina (Day of the Dead) and the quintessential Mexican music (Mariachi) that dates back centuries, just like mezcal!
WHO: Our Master distiller is Mr. Miguel Martinez Jeronimo, a 4th generation mezcal producer from the mountains of San Dionisio Ocotepec, Oaxaca, Mexico
HOW:
Totally artisanal and handcrafted mezcal: Our agave is harvested after 8-10 years -> the agave cone is roasted for 5 days in conical, rock-lined pit ovens (called “Palenque”) dug into the ground over charcoal giving it its smokier flavor mezcal is renowned to have-> the cone is crushed into pulp, using stone grinding wheels -> the extracted sugar juices are fermented in open air for 2 weeks -> final distillations in copper alembic stills for 10-12 hours.
“Day of AAriachi” mezcal is more than a drink, it is culture, hard work and intergenerational wisdom of all Maestros mezcaleros and their communities, which until now have enriched this tradition for centuries. In Mexico, mezcal is a venerated drink full of spirituality/mysticism
DID YOU KNOW?
A decade ago, the mezcal production in Mexico was less than 1 million liters annually. Now it is above 14 million liters, according to the Mezcal Regulatory Council (CRM). And by the way; “mezcal” comes from the Aztecs words” metl” and ”ixcalli” and means "oven cooked agave”.
FUN FACT:
Tequila is a mezcal that uses one particular agave plant (the blue agave weber) whereas mezcal can use any agave plant. Currently +40 agave types are used for mezcal but Espadin is the most popular (88% of all production) and also the one used for Day of AAriachi.
WHY:
Because we are so proud of what Mexico has to offer, we decided to expand our tribute to its legacy by creating a premium tequila 100% agave. Our blue bottle is a homage to the Blue Agave plant used to make all tequila.
WHAT:
Tequila is a characterful spirit that is only produced in Mexico due to its denomination of origin. Our tequila is premium and high quality as evidenced by our rigorous process and production.
HOW:
We follow a strict criterion from the agave selection to the slow roasting in brick oven to the agave crushing without using a diffuser followed by an 8 hours resting period. Our fermentation is natural, open and long (3-5 days) and it includes the fibers. All this adds flavors and complexity. We finish the production using alembic copper stills for the distillation, which usually is made twice but we add a triple distillation to create an ultimate smoothness whilst retaining the true character of tequila. Definitely a choice for the most demanding palates.

WHAT:
“Ideal 4 All” is a modern interpretation of a 100% agave pouring tequila priced fairly.
Inspired by Guillermo del Toro’s characters.
NAME:
o “Ideal” is powerful like our tequila, and it is one of the very few words that means the same in English, Spanish and Danish!
o “4” – A tribute to tequila´s versatility; 1: It can be consumed straight or 2: in cocktails. 3: When consumed responsibly it has health benefits (example: it helps reduce your body’s insulin resistance). 4: The residue from the agave has numerous sustainability benefits (example: it is used as organic compost).
o “All”- Inclusive and welcoming for everyone to enjoy.
HOW:
Our agave is harvested after 5-7 years and roasted -> fermentation over 12 hours -> distillation is done twice using stainless steel distillation -> After distillation, tequila is at 55% ABV, then with distilled water the degree is lowered to 35% ABV -> final quality control using several filtrations including cold filtration (to eliminate impurities) and a stainless cartridge filter.

WHAT:
Dehydrated powdered 100% natural Mexican lime made ready for use in cocktails, lemonade, desserts, cooking etc. Easy handling and storage. Uniform flavour where only water needs to be added.
PRODUCED IN:
The sunny Mexican state of Colima using “Mexican lime” (academically called Citrus aurantifolia but is also goes under the following names: Key lime, Creole lemon or Barman’s lime) which is the slightly more acid version
SHELF LIFE:
18 months – much longer than the limes and with no waste – and it is easier to handle
OUTPUT:
Very efficient: 100g gives the consumer 18 liters of drinkable juice - or 2 liters of squeezed intense limes.
NO artificial flavoring – ONLY natural components.
DID YOU KNOW:
Mexico is the main supplier worldwide of lime and lemon essential oil which is based on extract from the peel of the Mexican lime.
A homage to the most important date in Mexico, the Mexican Independence Day (16th of September every year), called the “Grito” in Mexico.
With a little play on words (“Grita”) we make it rhyme with the most popular tequila cocktail (Margarita) to get the party started
